All About Whiskey

Whiskey is a shortened form of usquebaugh, which English borrowed from Irish Gaelic uisce beatha and Scottish Gaelic uisge beatha. This compound descends from Old Irish uisce, "water," and bethad, "of life," and meaning literally "water of life.

The Scotch Highland whisky (made in pot stills) and that of the Lowlands (patent stills) differ in the percentage of barley used, quality of the water, quantity of peat employed in curing the malt, manner of distilling, and kind of casks in which they are matured.. Irish whiskey resembles Scotch, but no peat is used in the curing, and instead of the dry, somewhat smoky flavor of Scotch, it has a full, sweet taste.

American whiskeys are divided into two main varieties, rye and bourbon. They have a higher flavor and a much deeper color than Scotch or Irish and require from two to three years longer to mature.

Newly made whiskey is colorless, the rich brown of the matured liquor being acquired from the cask in which it is stored. Canadian whiskey has a characteristic lightness of body and must, according to law, be produced from cereal grain only

By law, the term Irish Whiskey can only be applied to whiskeys that are, fermented from grain, matured in oak casks for a minimum of three years and are distilled in Ireland. In addition, all Irish whiskeys distributed by Irish Distillers are triple distilled for extra smoothness. The three types of whiskey produced in Ireland are;

Pot Still - Characterised as full-bodied, smooth, spicy and flavoursome

Single Malt - Is 100% pure malted barley and water that is triple distilled, creating a rich and exceptionally smooth honeyed maltiness. Significantly the malt is dried in closed kilns and so has no peaty, smoky taste, but allows the clear taste of the malt to shine through.

Blended - Contain either Single Malt Whiskey or Pot Still Whiskey combined with grain whiskey and triple distilled to create a full bodied Whiskey product.

Please read on to learn something of the Whiskeys in our range and of course, taste them to savour the flavour for yourself!
